Buckwheat Bake

What do you eat after a good hard morning run or workout? This!

Buckwheat Bake Recipe

1/2 cup buckwheat flour
1 tbsp buckwheat groats*
1 tbsp vanilla protein powder
1/8 tsp baking soda

1 small to medium sized banana
1  tbsp vanilla unsweetened almond milk
1 egg
1/4 tsp vanilla extract

Combine the buckwheat flour, groats, protein powder and baking soda in a bowl. Add in the banana, almond milk, egg and vanilla extract. Mix well with a fork.

Grease a microwaveable dish with butter and then pour batter in. Jam some berries on top (frozen blueberries, fresh raspberries or blackberries, etc.) and microwave on high power for 2 1/2 to 3 minutes depending on your microwave.

Serve drizzled with honey or with a bit of organic peanut butter. YUMMY.  It's very filling so one of these will easily feed 1 or 2 people depending how hard you worked.

It's gluten free and Ender likes it so it's toddler approved!

* Buckwheat groats are whole, raw, unroasted buckwheat kernels. When the kernels are roasted they are known as kamut.
